The top-mounted heating system and fan not only force air downward, evenly drying all trays, but also horizontally, speeding up the drying process through efficient air flow. This also ensures that flavors don’t mix and that no condensation drips into the heating unit, which is what happens with many standard food hydrators with bottom-mounted heaters.
