Raw Creamy Cashew And Mushroom Soup

This milky white soup works best as a winter replacement for the classic morning smoothie, but since it packs quite the nutritional punch and is very filling, it can be consumed at any time of the day.

Mushrooms are among my favorite things to have during the winter and I often try to include them in whatever I am preparing. Mushroom cream soup had always been a personal favorite of mine and I have recently discovered that I like the raw version even better!

Did you know that mushrooms are among the few vegetables that can count as a source of vitamin D when enough sunlight is not available? They are also rich in phosphorus, potassium and the cancer fighting protocatechuic acid. Some studies have linked an elevated mushroom intake to a lower incidence of breast cancer.

Although low in fat when compared to other nuts, cashews are a good source of monounsaturated fatty acids, protein and dietary fiber, as well as an excellent source of manganese, magnesium and phosphorus (about 100 grams of cashews can provide over 80% of their daily recommendations). Loaded with vitamins of the B complex, cashews help protect metabolic activity and encourage the production of healthy red blood cells.

Onions are abundant in compounds that have anti-inflammatory, anticholesterol, anticancer, and antioxidant properties, one of which is quercetin. Studies have shown that eating more onion can significantly reduce the risks of developing head and neck cancers. Quercetin is also believed to have antiviral properties, as well the ability to speed up metabolic processes.

Equipment Needed: Ingredients:
  • 2 cups of cashew milk (raw cashews and water to desired consistency)
  • 1 small onion
  • 1 garlic clove
  • 2 cups of your fave fresh mushrooms
  • 2 tablespoons of raw soy sauce - Nama Shoyu
  • 1 tablespoon of lemon juice
  • salt and pepper to taste
  • (optional) a pinch of finely chopped fresh parsley
Directions:
  1. Blend all ingredients except the parsley and a few of the mushrooms until you have obtained a smooth and creamy soup. Chop the remaining mushrooms and top the soup. Serve with sprinkled parsley and enjoy!
